Layered Parfait

(This is a favorite breakfast dessert among the many guests at MD Resort Bed & Breakfast.)
Using a large, clear, glass parfait dish, make layers described below.

Layer #1 – Granola without raisins
Layer #2 – Frozen strawberries and blueberries or bananas
Layer #3 – More granola
Layer #4 – Strawberry yogurt
Layer #5 – More granola
Layer #6 – More fruit, may use same as above or change it up (canned mandarin oranges make a delicious and beautiful parfait).
Top with Cool Whip or whipped topping.

Cake Mix Cookies

Any Kind of cake mix
2 Tbsps water
2 eggs
1/2 cup oil
1 tsp extract
1/2 cup pecans/walnuts

Drop batter into bowl of confectioner’s sugar (about a ts of batter per cookie, depending on size of cookie you want). Roll in sugar until it is in approximate shape of a ball. Cook at 350 degrees for 8-10 minutes. Devils Fool Cake is a good cake batter to use with a small amount of almond extract. Yellow cake mix goes will with vanilla or lemon extract. Makes 4 dozen depending on size of cookie.

4 Layer Desserts

1st layer-

1 and 1/2 cups all purpose flour
1/2 cup chopped pecans
1 and 1/2 sticks of butter melted
Mix and bale on 350 until golden brown, then set and cool.

2nd layer-

1 8oz. box cream cheese
1 cup powder sugar
1 cup cool whip
Mix and layer on the 1st layer after it cools

3rd layer-

3 boxes instant pudding of your choice
4 cups of cold milk
Mix and layer onto the 2nd layer

4th layer –

Large tub of cool whip layer onto 3rd
Then set in refrigerator for about an hour to chill.

Pecan Sandies

1 cup butter
6 tablespoons sugar
2 and 1/2 cups flour
1 cup chopped nuts

Cream butter. Add sugar and blend. add flour, mixing thoroughly, add pecans. Roll into a ball, crescent, or finger shape. bake on ungreased cookie sheet or slab at about 300 degrees for 20 minutes or until light brown. While hot, roll in confectioner’s sugar.

Dump Cake

1 can pie filling
1 can crushed pineapple(undrained)
1 yellow or white cake mix
2 sticks melted butter
1 cup coconut
1 cup nuts

Pour pie filling in 10″ tube pan. Top with pineapple. Dump in cake mix. Pour butter over top. DON’T MIX! Sprinkle with coconut, then nuts. Bake at 350 degrees for one hour. Cool slightly and serve.

No Bake Cookies

This is a great recipe, the cookies are wonderful!

2 cups of white sugar
1 stick oleo
1/4 cup cocoa
1/2 cup milk

Boil hard 1 minute (and stir) remove from heat. Stir in: 1 teaspoon vanilla 1/2 cup peanut-butter and 3 cups Oats Place by spoonfuls onto wax paper and let set

Aunt Jerry’s Chocolate Cake

Mix in bowl:
2 cups of sugar
2 cups of flour

Heat in Pan:
1 stick oleo
1 cup water
4 tablespoons cocoa
1/2 cup of crisco
Bring to a boil and let boil for at least a minute. Pour over flour and sugar.

1/2 cup buttermilk
2 beaten eggs
1 teaspoon vanilla
1 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon salt

Bake cake at 350 degrees until a tooth pick inserted into center comes out clean.
5 minutes before cake is done heat to a boil:
1 stick oleo
4 tablespoons cocoa
6 tablespoons milk

1 box of sifted powdered sugar
1 teaspoon vanilla
1 cup of nuts
Pour over hot cake as the icing.

No Bake Brownies

1 cup evaporated milk
2 cups miniature marshmallows
6 oz package semi sweet chocolate pieces
1/2 cup sugar
1/4 teaspoon salt
1 tablespoon butter or margarine
1 tablespoon vanilla
2 packets Graham crackers, finally rolled and crumbled
1 cup chopped walnuts

Cook first five ingredients in a 3 quart sauce pan over medium heat until chocolate pieces and marshmallows melt. Cook and stir to a full all-over boil and continue to boil 5-6 minutes. Remove from heat and gradually stir in remaining ingredients. Press mixture into a 9 inch butter pan. Chill one hour or until set. Cut into 24 brownies, if desired, sprinkle with sifted powdered sugar.

Peanut Butterscotch Squares

1/2 cup oleo
1/2 cup brown sugar
1 and 1/3 cup flour

Cream until crumbly. Press into an ungreased pan, bake at 350 degrees for 15-20 minutes.

2/3 cups sugar
2/3 cups light corn syrup

Cook until boiling- remove from heat
Stir in:
1 6 oz. package butterscotch chips
1/2 cup peanut butter
2 cups corn flakes

Pour over crust. Cool and cut in squares

Peanut Butter Candy

2 cups sugar
1/2 cup milk

Boil for three minutes. Take off heat.
1 cup peanut butter
1 heaping spoon of butter
1 teaspoon vanilla

Stir until smooth. Pour into Pan

Ranger Cookies

2 cups sugar
2 cups brown sugar
2 cups crisco
4 cups flour
2 t. soda
1 t. Salt
1 t. baking powder
4 cups of oatmeal
4 cups wheaties
2 cups of nuts
2 t. vanilla
4 eggs

In a large bowl, cream sugars and crisco. Add eggs and vanilla. Stir dry ingredients and add to first mixture. Mix cereals, nuts, and coconut then stir in. Mixture will be very stiff, roll in balls the size of walnuts. Bake 12 minutes at 375 degrees.

Peanut Butter Supremes

1 cup shortening
1 and 1/4 cup peanut butter
1 cup white sugar
1 cup brown sugar, packed
2 eggs
2 and 1/2 cups flour
1/2 teaspoon baking soda

Mix shortening and peanut butter; add sugars. Beat well; beat in eggs. Mix flour, salt, and soda; stir into peanut butter mixture. Make dough into small balls, put on baking pan. Flatten with a fork. Bake at 375 degrees for 10-15 minutes.

Oatmeal Cookies

3/4 cup vegetable shortening
3/4 cup butter
2 cups of brown sugar
1 cup sugar
2 eggs
1/4 cup water
1/4 cup evaporated milk
2 teaspoons vanilla
1 and 1/2 teaspoon

Preheat oven to 350 degrees. Beat together the above ingredients until creamy. Combine: 6 cups oats 2 cups all purpose flour 2 teaspoons salt 1 teaspoon soda combine the two mixtures, mix well. Drop onto greased cookie sheet. Bake at 350 degrees for 10 minutes.

Stained Glass Cookies

A great project for Christmas

1 cup butter
1 cup shortening
1 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
5 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups crushed hard candies

Preheat oven to 350 degrees. Cream butter shortening, sugar, brown sugar, eggs, and vanilla. In a separate bowl mix together flour, baking soda, and salt; add gradually to creamed mixture. Chill dough overnight. On waxed paper, roll dough into thin snakes, about 6″ long. Children will mold dough into desired shapes, such as hearts, flowers, and shamrocks. Place the cookies onto well greased baking sheets. Fill the openings with crushed hard candies. If you wish to hang the stained glass cookies, use a toothpick to make a hole near the top of each cookie. Then bake for approximately eight minutes or until the candy melts. (Makes about 4 dozen cookies.) Let the cookies cool completely before removing them from the baking sheet. If desired, tie a loop of thread through the hole in each cookie.
