Cooking classes are a great way to learn something new while interacting with your piers on a more personal level. What’s the best part? You get to enjoy all the wonderful dishes you’ve just created! Here’s an example of one of those dishes: A fun and creative spin on traditional sweet potato soup!
Sweet Potato Soup Shots
(Makes 13–6 oz. cups)
2 tbsp unsalted butter
1 medium onion, chopped
1 cloves garlic, chopped (1 T. minced garlic)
5 sweet potatoes, peeled and cubed
2 baking potatoes, peeled and cubed
1 containers (32 oz. each) chicken broth
¾ cup heavy cream
Salt/pepper to taste
Toasted baguette slices and minces fresh parsley for garnish
Melt butter in large pan or Dutch oven over medium heat. Add onion and garlic; cook 3-4 minutes. Add all potatoes, broth and 2 cups water. Bring to boil, reduce heat and simmer 25-30 minutes or until tender. Let cool slightly, then, working in batches, puree soup in a blender. Return to heat. Stir in cream; heat through. Add salt and pepper. Garnish with crostini and parsley.
