JIFFY CORN CASSEROLE
1 can whole kernel corn, drained 1 can creamed corn 2 eggs, beaten 1 box Jiffy corn muffin mix 1 stick butter, melted (or 1/2 c. oil) 1 c. sour cream 1/4 – 1/2 tsp. garlic powder (opt.) Shredded cheese (opt.) Preheat to 350°F. Mix all ingredients except cheese. Sprinkle shredded cheese on top, if desired. Bake in casserole dish or 9″x13″ baking dish for 30 to 45 minutes or until fully cooked in center.
SWEET POTATO CASSEROLE
1 (16 oz.) can sweet potatoes 1/2 c. brown sugar 1/4 tsp. salt 1/2 tsp. cinnamon 1 egg, beaten 4 tbsp. melted butter1 pkg. marshmallowsButter baking dish. Place 1/2 of mixture in dish. Dot with marshmallows, then add remaining mixture. Bake at 350 degrees for 30 minutes. Remove from oven, dot top with marshmallows and replace in oven about 10 minutes or until brown
